Zucchini stuffed with eggplants
Vegetarian recipe, very tasty
* 1 kg zucchini
* 500 gr eggpant salad (check the Salad section)
Boil the zucchinni for 10 minutes. Cut them in pieces if they are too long, like of 7 cm, and hollow out the core and stuff the eggplant salad. Ornate with tomatoes slices.
