Rice with tomatoes salsa and bacon


A delicious and filling dish



* 200-250 g rice
* 2 mugs tomatoes juice
* 200 g smoked bacon
* 2 eggs
* 2 bananas
* 2 spoons flour
* 2 leaves parsley
* oil
* basil
* 4 cloves garlic


Boil the rice with lots of water to cover it. Throw couple of garlic cloves and some basil inside. Leave to soften for 20 minutes. Remove from fire and cover. Separately, chop 2 garlic cloves and stir fry them for 2 minutes until soften. Do not fry them too much because they become bitter. Add the chopped bacon (small 2/2 cm cubes) and let it fry until the fat from the bacon melts a bit. Add 2 mugs of tomatoes juice, salt, pepper and let it boil until it thickens a bit. Separately pouch the eggs. Remove from fire. Peel and roll through flour the bananas and fry them until they become beige and soft.

Place the rice as a round pile, decorate it with a leaf of parsely. Place next to it, on the side, an egg, a banana and some bacon-tomatoes salsa. These ingredients serve two.
