Sweet potatoes, sour pickles...just yummy

Ingredients:

* 6 large potatoes, cooked in jackets, peeled and sliced into thin circles
* salt and pepper to taste
* 1/4 cup olive oil
* 1/2 cup vinegar (or lemon juice)
* 1 spoon paprika (hot or sweet)
* 2 spoons minced parsley
* 1 large red onion sliced in thin circles
* 2 hard cooked eggs cut in round circles
* 1 spoon paprika
* 4 pickled green tomatoes or pickled cucumbers

Preparation:

Peel and slice potatoes while they are still hot. Place them into a bowl, sprinkle with salt and pepper. Chop the green pickled tomatoes (or cucumbers) and mix with potatoes and julliened onions. In a jar mix oil, vinegar, paprika and parsley. Shake well and pour over the potatoes. Chill for 1 hour. Add the eggs and mix very gently.
