Nettles with polenta

This is a spring time dish, very nutritious and full of iron.

Ingredients:

* 1 kg nettles
* 3 spoons flour
* salt, pepper
* 1 coffee cup of milk
* 2 spoons butter
* 2 cloves of garlic

Preparation:

Clean and wash the nettles. Use gloves against the irritation. Boil them and they dry out. Add milk, butter and flour. Mix well to incorporate. Cut the garlic into small pieces and throw it over the nettles. Boil some 5 more minutes.

The nettles are usually wild plants and their leaves create some sort of irritation. Some people use the benefic irritation as a rheumatic treatment. It is also said that Jesus Christ was beaten with the nettles on his way to Golgota. The Romanians eat the nettles with no religious signification but as a welcome gesture to the spring. Old people used to say that after a long, difficult winter when one eats lots of meat, the nettles help to "change" the old blood into new one. A bodily and spiritual cleansing.

To be served with polenta. Can be eaten cold.
