Ingredients:

* 1 can mushrooms (or one kilo of fresh ones)
* lemon juice
* butter
* brains (preferable big, like sheep, beef)
* 1 egg
* parsely, chives, fennel
* salt, pepper
* 1 glass cherry

Preparation:

If the mushrooms are fresh, clean and cut off the stems. Sprinkle first with lemon juice and let it rest for 15 minutes, cover with warm water and let it aside for 20 minutes. Meanwhile you prepare the brains. Mash the brains, mix finely chopped parsley, fennel, chives, salt and pepper to taste. Mix all well and stuff the mushrooms hats. Butter a pan, arrange the stuffed mushrooms, and pour cherry on top, sprinkle more parsley and bake. Add a bit of extra butter if needed. You can use the stems to prepare other dishes, like white sauce (mix melted butter with some 2 tbs flour, set to boil, add milk, salt, and chicken broth and boil until you obtain a sauce as thick as a sourcream, add the stems of muhrooms and voila) with mushrooms or others.
