Eggplants salad


Light, delicious, exquisite



* 1 kg eggplants
* 1 big onion (eventually red onion)
* 1 spoon apple vinegar
* 1 glass oil
* salt, pepper
* 2 tomatoes (for ornament)


Roast the eggplants. Peel, salt and drain them. Chop the onion finely and mix it with the vinegar. Mix the eggaplants with oil, salt until becomes foamy. Add the onion with the vinegar, eventually pepper. Ornate with tomatoe slice. Hint: some people add 1-2 spoon of sour-cream and 3-5 squashed garlic pieces, eventually a bit of sugar to smooth it down. Personally I prefer the mayonanaise eggplant salad with no onions, sour-cream or garlic.
