Appetizers

Jellied pork

Served either as main dish or an appetizer, is usually cooked on Christmas.

Ingredients:

* 1,5 kg pork feet and/or head, plus ears
* 1 onion
* 2 carrots
* 1 parsnip
* 1 parsley root
* 1 celery root
* 2 bay leaves
* 3-4 juniper berries
* 3-4 garlic cloves
* salt

Preparation:

Fish stuffed eggs

For the sea-food lovers!

Ingredients:

* 6 eggs
* 1 teaspoon mustard
* 1 tablespoon oil
* fish paste to taste
* 6 olives
* lettuce

Preparation:

Hard boil the eggs and let cool. Shell and cut them in two lengthwise. Remove the yolks and place in a bowl. Mix with the oil poured drop by drop. Add the fish paste and mix. Then add the mustard. Fill the whites and arrange on a plate. On each egg half place half an olive cut to make a flower. Decorate the plate with some lettuce leaves.

Cheese and cumin

Try out this one.

Ingredients:

* 250 sheep cheese,
* 100 g butter,
* 1 teaspoon cumin (ground very fine),
* 1 teaspoon paprika, salt,
* radishes

Preparation:

Sieve or grind the cheese. Mix with butter, add cumin and paprika, salt if needed. Mix well. Place on a plate and garnish with radishes cut in flower shapes. This paste can be used for sandwiches too.

(The Romanian name of the dish: Pasta de branza cu chimen)

Caltabosi

A Tasty sausages.

Ingredients:

* intestines (well washed in cold water)
* 1.5 kg entrails (heart, lungs, spleen, kidneys, liver)
* 500 gr fatty meat
* 2 onions
* 0.5 kg pork skin
* salt, pepper, juniper
* 500 gr rice lightly boiled

Not as blood as Mary, still, is delicious.

Ingredients:

* pork's intestines
* 1 litre pork blood
* 0.5 kg bacon
* 0.5 kg rice
* 1 kg fatty pork meat
* 0.5 kr pork skin
* salt, pepper, thyme

A great salad that is usually found on all Romanian tables during Christmas, but not only.

Beans with mayonnaise

A bit unusual, but give it a try.

Ingredients:

* 400 g dried beans
* 1 big onion
* salt
* pepper
* mayonnaise
* beets (pickled peppers, cucumbers)

Preparation:

Baked bellpeppers

This is a 20 minutes delicious appetizer.

Ingredients:

* 6 big and fat bellpeppers
* oil (5 spoons)
* vinegar( 5 spoons)
* salt (1 teaspoon)
* mustard seeds (a few)
* laurel leaves (a few)
* pepper (few seeds, and a touch of powder)
* sugar (2 spoons)
