Zakuski

A delicious vegetable mix, very popular in East Europe. Zakuski, as called in Russian, or Zacusca, as the Romanians call it, is a way of mixing vegetables for the long and heavy winters that cross East Europe, when the procuration of fresh legumes was once a problem. Zacusca is a vegetable paste that is generously spread on bread and eaten as an appetizer or as light dinner. If the bread is a toast, is even better. The ingredients bellow are for at least ten jars of Zacuski. If you only want to taste, diminish the quantities.

Ingredients:

* 6 kg eggplants

Ingredients:

* 200 gr potatoes
* 200 gr cabbage
* 3 eggs
* fresh parsli, dill
* 100 gr green beans
* 200 gr bread core (sponge)
* 200 gr cauliflower
* 100 gr spinach
* 200 gr pieces of leek
* 200 gr cheese
* 1 onion
* pepper, salt, oil
* flour, bread crumbs

Preparation:

Turnip with sour cream

Easy to cook, easy to eat

Ingredients:

* a few turnips
* butter
* milk
* flour
* salt, pepper
* lemon juice
* sour cream
* parsely
* grated cheese

Busy chewing. This is a must-try!

Ingredients:

* 1 big eggplant
* 2 onions
* 3 tablespoon oil
* tomatoes
* salt
* pepper
* parsley

Very, very delicious!

Ingredients:

* 500 g cheese
* 100 g butter
* 1 spoon minced dill or parsely
* couple of tomatoes
* salt

Preparation:

Drain the cheese well and mix with the butter and salt. Choose firm and round tomatoes, cut a slice on top and scoope them from all the seeds. Fill with the cheese mixture, then spread a little dill or parsely on top. Refrigerate.

Toba

A delicious meat product

Ingredients:

* 2 pig legs
* 2 kidneys
* 1 heart
* 100 g pork skin
* 3 bay leaves
* 1 pig bladder (or thick beef intestine)
* 500 g pork meat
* 2 ears
* 1 tongue
* 1/2 pig head
* 2 cloves garlic
* salt, pepper

Preparation:

Tarator

A very, very tasty and refreshing dip. The Greeks call it "tzatziki" and the Turks "Dgiadgeek". In Lebanon you find it as "Khyar w laban", meaning cucumber with youghurt. Also in Lebanon the "Tarator" is another type of dip made out of Tahina (sesame puree, the same used to make the hommos), water, lemon juice and salt. The Lebanese Tarator is used to dip fried fish, fried cauliflower, shawarma, falafel.

Th Greek, Turkish and Romanian tarator can be used even as a refreshing dish during summer.

Ingredients:

* 500 g sheep youghurt
* 1 spoon olive oil

Stuffed eggs

Very, very nice.

Ingredients:

* 6 eggs,
* 60 g butter
* 1 teaspoon finely minced parsley
* salt
* pepper
* lettuce

Preparation:

Hard boil the eggs, shell and cut them in two lengthwise after they are cool. Carefully remove the yolks and place them in a bowl. Mix them with the butter. Add parsley, salt and pepper and then use the paste to fill the egg whites. Spread some chopped parsley on top. Arrange the stuffed eggs on a bed of lettuce on a plate.

Smoked sausages

A delicious recipe for home made smoked sausages

Ingredients:

* 1 kg pork meat
* 1/2 kg bacon (lard)
* garlic
* salt, pepper, nutmeg
* intestines

Preparation:

Romanian Pouched Eggs

Very simple and tasty recipe for a light dinner.

Ingredients:

* 1 litre water
* 50 ml vinegar
* 1 spoon salt
* 6 eggs

Preparation:

Boil the water with the vinegar and salt. Break the eggs in a mug, do not mix them, keep them as intact as possible. Pour the eggs in the boiling water. Remove them with a filter after 2 minutes. Place them on letuce or fill in some tomatoes.

Potato balls

Made out of potatoes, instead of the regular meat, this is a tasty dish for vegetarians as well

Ingredients:

* 500 gr potatoes
* 200 gr sweet cheese
* oil
* dill (or parsli, green onion, green garlic etc)
* 2 eggs
* 150 gr flour
* salt to taste

Preparation:

Pancakes with soft cottage cheese and dill

Very fresh and very tasty.

Ingredients:

Pancakes: 100 gr flour, 1 spoon oil, 3 eggs, salt, 300 ml milk. Mix them all and fry the regular pancakes a bit thicker.

Filling: 250 gr soft cottage cheese, salt, 3 spoons chopped dill. Mix the cheese, salt, dill until obtain a paste. Fill and roll the pancakes when are still hot. Place them in the oven for 5 minutes. Serve hot with sour-cream.

Omlette with French fries

A very simple and tasty appetizer.

Ingredients:

* 6 eggs
* 2 spoons of milk
* 1 spoon butter
* 300 gr potatoes
* 2 spoons oil

Preparation:

Peel the potatoes and fry them in the butter mixed with the oil. When they are ready, add the mixed eggs with milk, salt, pepper.

* 500 g ground pork
* 500 g finely chopped onions
* 2 eggs
* 100 ml oil
* 6 slices white bread
* 1 head garlic (minced)
* salt and pepper to taste
* 1 bunch parsley
* 1 bunch dillweed (chopped)
