Celery musaka

Ingredients:
* 500 g celery knobs
* 3 tbs lard
* 1 onion
* 500 g chopped veal
* 1 slice bread
* one leek
* 3 eggs
* parsley, thyme
* salt, pepper
* 1 tomatoe
* 2 tbs wine
* little butter, bread crumbs, milk, flour
* tomatoes sauce
* grated cheese
Preparation:
Peel and clean the celery knobs, slice lengthwise and fry in 2 tbs of lard. Fry the finely chopped onion in some lard as well, add the veal (which was well mixed with one slice of bread soaked in milk and squeezed and some chopped leek). Fry the veal with the onion until brownish and let it cool down. Add the egg, the finely chopped parsely, thyme, salt, pepper, the sliced tomatoe and 2 tbs of wine. Mix all well. Grease a baking tray with butter, sprinkle bread crumbs. Put one layer of meat, one layer of celery, starting and finishing with layers of celery. Cover the top with tomatoes sauce and bake for 1/2 hour. Separately, beat two eggs with some butter, add little milk, and some flour just to make a thick sauce. Add salt to taste. Also pour this delicious sauce on top, some grated cheese, and some chopped parsley. Place back in the oven and bake until you obtain a nice brown crust.
